Viticulture has been present in this area dating back 2,600 years ago to the ancient Greeks. The soils of this area of the Cotes de Provence is composed of clay and limestone that are unique in their origin from ancient stony alluvial deposits from mountain run off. THe poor and shallow soils, formed by limestone and argillaceious sandstone, produce subtle elegan rose with great structure.
For this wine we collaborated with a family estate that has been cultivating grapes in the Sainte Victoire AOC since the 18th Century. VDP Mediterranee is a rare appellation for this high quality region contributing less than 5% of total production. The appellation gives us the freedom to bottle in a 1 Liter format.
Grapes are hand picked at night to insure freshness. Grapes are immediately direct pressed in pneumatic press to retain primary aromas. No maceration takes place to preserve elegance. The resulting wine is cold fermented between 13-16°C for 15 days.
Showing a beautiful and luminous pale pink hue. The balanced pallet is bright and aromatic. Wild strawberry, watermelon and white-fleshed fruit with distinct aromas of white pepper and stone dust.
